ABOUT CANYON SMOKEHOUSE

Canyon Smokehouse is the brainchild of Jacob Nelson, a chef and restaurant manager with over 18 years of experience. From the start of his culinary career attending New England Culinary Institute, Jacob dreamed of opening his own place. Since graduation, Jacob has worked as an executive chef in kitchens across the United States, and even worked at McMurdo Station in Antarctica! His passion for Texas-style BBQ, paired with a love of fast-casual dining done right, inspired every detail of Canyon Smokehouse.
Erin, his partner in life and business, has a deep love of the desert southwest. It was her idea to move to Bluff, and in addition to co-owning the restaurant she also serves as Bluff’s Town Manager. She brings her passion for the area and is grateful for the opportunity to speak with so many wonderful visitors about what makes Bluff so great! Together, we enjoy exploring the red rock canyons, hiking with our dogs, and dreaming about what Canyon Smokehouse looks like in the future.

We are incredibly proud of our amazing team of staff. We have a crew of hardworking, talented individuals, all of whom grew up right here in the Bluff area. Whether they’re keeping the front of house running smoothly or sharing a local tip with a curious traveler, they’re the heart of the Smokehouse and we could not do what we do without them.
